Ingredients (serves 4)360gms cauliflower cut in florets1 tbsp vegetable oil½ tsp turmeric powderFor the sabzi;3 tbsp vegetable oil110gms white onion blended to a paste 5 cloves of garlic crushed to a paste2” ginger crushed to a paste½ tsp turmeric powder1 tsp kashmiri chilli powder400gms tinned tomatoes blended80 gms frozen green peasSalt to taste1 tsp garam masala powderCoriander to garnish  1. Preheat oven to 200c. Add the cauliflower to a baking dish. Mix in oil with the turmeric powder and bake for 15 minutes 2. In a saucepan heat the oil add onions. Fry for 10 minutes. As they change colour and soften3. Add garlic and ginger paste stir well and cook for 1 minute. Now add the turmeric powder and chilli powder4. Add tomatoes and cook for 7-8 minutes as the oil begins to separate from the sides5. Turn the heat to low, season. Add the baked cauliflower along with the frozen green peas. Stir well, cover and simmer for 2 minutes6. Turn the heat off and add the garam masala along with fresh coriander. Serve with rotis and raita.#vegan #curry

A culmination of my travels, regional recipes and traditional flavours. These recipes aren’t just local to regions but also part of their heritage for generations. The word curry in essence is a gravy or a semi dry dish cooked with spices eaten with breads or rice. I know purists have said ‘Indians do not use this word’. And yet it has been used in many ways across the country.A term that has been coined historically by the British, Portuguese and the French. A term British picked from the Portuguese who called it ‘caril’ meaning broth. This was also adapted from various south Indian words; where the word ‘karil’ describes seasoning with spices, sautéed meat and vegetables. I come from a family with roots in the west of India; from Bombay to the Konkan region and sprawled through the Deccan Plateau. The soul food for most families from the west of India is what we know as ‘fish curry rice’ If you have spent time in India this is a term locals use to describe cooking a spicy, creamy, hearty fish curry poured over plain rice and eaten with crispy fried fish or prawns on the side. ‘Fish curry rice’ is a rite of passage for Maharashtrians and has been my soul food ever since I was a young girl living in Bombay. It’s the memories that remind me of home, of comfort and the joy eating that fish curry my mother cooked and served.As much as the word curry has been generalised it has also been popularised with the rise of spice traditions of India as one of the most accomplished cuisines on the global stage.I want you to look at this book as a celebration of regional Indian cooking, the curries showcase the variety and diversity of India, its heritage and the rich culture. Simple, full of flavour and perfect served with puris or naan. Recipe👇🏽Ingredients240gms tinned chickpeas3 tbsp ghee or vegetable oil3 green cardamom pods180gms white onions blended to a paste4 garlic (crushed to a paste)2” ginger thinly sliced in matchsticks1 heaped tsp cumin powder1 heaped tsp coriander powder½ tsp kashmiri chilli powder1 tsp mango powder/ Amchoor90gms chopped tomato1 tbsp tomato puree1 tsp caster sugar150mls water or veg stockSalt to tasteFresh coriander for garnish 1. Drain the chickpeas and set aside. Heat oil in a heavy bottom saucepan over medium heat. Add the cardamom pods let them sizzle for a few seconds2. Fry the onions on a medium heat for 7-8 minutes as they soften3. Add crushed garlic and most of the ginger (saving some to garnish). Fry for 20 seconds and add powdered spices. Fry the spices for 5-6 seconds as they release their aroma4. Tip in the chopped tomatoes and tomato puree. Fry for 5 minutes, they will begin to soften. Mash them lightly with the back of the spoon5. Add the chickpeas and fry for 4-5 minutes as the masala coats them. Now add the stock or water, sugar and season to taste6. Stir well and bring to a boil. Simmer and cook with the lid on 20-25minutes. Stir half way through cooking and mash some of the chickpeas lightly with the back of the spoon to thicken the gravy7. Garnish with fresh coriander and ginger. Serve warm with puris.#vegan #curry

Served with rice, papad and pickle for a weeknight dinner.Save the recipe below👇🏽Ingredients300gms toor dal (Split yellow pigeon peas)1.2 litres water1 tsp turmeric powder2 green chillies roughly chopped100gms tomatoes roughly choppedPinch of salt2 tsp tamarind pasteFor the tadka;3 tbsp ghee¼ tsp cumin seeds1 tsp mustard seeds4 garlic cloves thinly sliced10 curry leaves½ tsp mild chilli powderSeason to taste1 tbsp coriander leaves finely chopped 1. In a saucepan add dal along with water, turmeric, green chillies, tomatoes and salt. Bring to a boil and simmer for 45-50 minutes2. Turn the heat off & cool the dal slightly, add the tamarind paste and season to taste3. In a frying pan heat the oil. Add cumin seeds and fry for a couple of seconds. Add the mustard seeds, as they begin to splutter quickly add the garlic and fry4. Add curry leaves and the chilli powder. Turn the heat off and add this to the cooked dal. Garnish with coriander. Serve with rice and papad.
